January 2006: Here we are 3 years later. Thank you Everybody for your support in my Dream. I am so excited to be able to bring you all the new "Healthy" 0 Trans Fat Products. I have found that this new crust is Superior to my original in many regards. Not only is it 0 Trans Fat, it is also Much more Flaky than the original. I hope you all love it. Please let me know what you think. These last 3 years have been fun, as many of you may know I opened a 2nd Store, Downtown Madison, in Oct 2004. All was great however I found out I was pregnant with my 2nd Child as we were fixing up the space to Open. It became more than I could manage, not to mention staff!!, so I closed it in June 2005. Now I am very Happily based in Fitchburg, I am always adding new things to my menu and Bakery Case. I gave birth to my third Daughter in July 2006. Now my Future goals are to bring more space to my Bakery so we can invite and entertain more of our Spectacular Guests.
Thank you to all, Lindsay Gehl
January 2004 Hi my name is Lindsay. I started LMN O’Pies in 1996 when a friend of mine requested a Banana Cream Pie. At that moment I realized how much people like “Homemade Pies”. As a little girl I always wanted to own a restaurant. I began working at Michaels Frozen Custard at the age of 15. I also worked at Culvers for many years and became their symbol of what it takes to be a successful worker, a “Smile”. Throughout my life I have worked in every aspect of the restaurant business. My Grandma taught me how to make her Award winning Cherry Pie when I was very young, so I adapted all of those skills and began making my own pies. The skies the limit when it comes to pies. After giving away samples of my cooking at my parents store, Florilegium in downtown Madison, I began receiving pie orders quickly, and just focused on using the best ingredients, and making everything Fresh as fresh can be. Over the years I have made hundreds of different kinds of pies and in 2002, when my daughter was born, I decided to dedicate all my time to making my business, which had been “Word of Mouth” up to this point, a household name! I enjoy making each and every pie from scratch with all fresh ingredients. And every time I make a new kind of pie, I have at least a dozen taste testers. I can confidently say that every recipe is tried, tested and guaranteed to be the best!. All my recipes are originals and my crust is the result of countless failures. Like all homemade goodies, everything we make is exceptional in taste and quality, with that homemade look! In the Spring of 2003, I started renting a Church kitchen in Verona, WI . Out of that kitchen, I produced hundreds of pies and began selling LMNO'Pies at farmers markets all over Dane County. Wholesale accounts were also started at several local delis. The need for a bigger kitchen was obvious. LMN O’Pies Bakery and Café is a result of a lifelong dream to open a restaurant, a ton of hard work, and a lot of support from my family and friends. I welcome you to my bakery. We offer hundreds of exceptional homemade pies, cheesecakes, cakes, cookies, pastries, dinner pies, breakfast pies, and Pasties. Every item is “Made by Hand with Heart” and we guarantee you’ll love it. We also invite you to come sit in our “Pie Shop” and enjoy a slice of pie, or a full meal anytime. Thank you Lindsay
